Here are the steps to prepare Paneer Pasanda:


1. Marinate the Paneer

Cut paneer into thick slices and marinate them with a mixture of yogurt, red chili powder, turmeric powder, garam masala, ginger-garlic paste, and a pinch of salt. Allow the paneer to marinate for at least 30 minutes.

2. Prepare the Filling:

 In a bowl, mix together crumbled paneer, finely chopped cashews, raisins, and a pinch of garam masala. This will be used to stuff the marinated paneer slices.

3. Stuff the Paneer

Take a marinated paneer slice and place a spoonful of the filling mixture on it. Cover it with another paneer slice, creating a stuffed paneer sandwich. Press gently to secure the filling.

4. Shallow-fry the Paneer: 

Heat some oil in a non-stick pan over medium heat. Carefully place the stuffed paneer in the pan and cook until it turns golden-brown and crisp on both sides. Remove the fried paneer and set it aside.

5. Prepare the Gravy

In the same pan, add some more oil or ghee. Add cumin seeds and let them splutter. Then, sauté finely chopped onions until they become translucent.

6. Blend the Gravy Base

Add chopped tomatoes and cashews to the pan and cook until the tomatoes become soft and mushy. Allow the mixture to cool slightly, and then blend it into a smooth paste.

7. Simmer the Gravy

Return the blended mixture to the pan and cook over low heat. Add red chili powder, turmeric powder, coriander powder, garam masala, and salt. Cook the gravy until the oil starts to separate from the masala.

8. Add Cream

For a creamier texture, add fresh cream or malai to the gravy and mix well.

9. Simmer Stuffed Paneer

Gently place the fried stuffed paneer slices into the gravy and let them simmer for a few minutes, allowing the flavors to infuse.

10. Garnish and Serve

Garnish the Paneer Pasanda with chopped cilantro leaves and a drizzle of cream. Serve hot with naan, roti, or steamed rice.
